November 14th, Ruby's Sweet Potatoes and Apples...

Candied Yams and Apples

Ingredients:

4 large yams
2 large sweet apples
cinnamon
brown sugar
butter or margarine
marshmallows

Directions:

Preheat oven to 350. Line the bottom of a medium sized baking dish with sliced sweet potatoes. Sprinkle cinnamon and brown sugar over the top. Place a row of sliced apples over the top. Sprinkle with cinnamon and brown sugar. Continue alternate rows of sweet potatoes and apples until you reach the top of the baking dish. Dot the top with butter.

Bake for 50 minutes then check for tenderness. If not tender give ten more minutes. Remove from oven and turn on the broiler. Cover with marshmallows and put back in the oven for 30 seconds or until light brown. Be sure to watch or they will burn.

Tip: For moist sweet potatoes dot with butter or margarine twice while in oven.

November 7th, My favorite pumpkin pie recipe...

15 oz can pumpkin (2 cups)
10 oz Sweetened Condensed Milk
2 large eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
9 inch pie crust


Directions:

Preheat oven to 425 ° F. Whisk pumpkin, sweetened condensed milk, eggs, spices, and salt in medium bowl until smooth. Pour into crust.

Bake 15 minutes, reduce oven temperature to 350 ° F, continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Remove from oven and allow to cool.
