Corn bread recipe

Ingredients:

2 cups yellow corn meal
1 1/2 cups white flour
(I use rice flour because of my Celiac allergy)
2 tsp salt (use 1 tsp for lower sodium diet)
2 tsp baking powder
1 tsp baking soda
2 tbs sugar
your choice of 2 or 3 large eggs (works either way but fluffier with 3)
1 tbs vegetable oil
2 cups milk
margarine or butter

Directions:

Preheat oven to 400. Mix dry ingredients in a large mixing bowl. Add eggs, oil, and milk. Mix until smooth. Cover sides and bottom of a medium sized square baking pan with margarine or butter. Pour in mixture allowing room for it to rise by 1/4 to 1/3.
Bake for approximately 30 minutes or until edges are light brown. Press a fork in the center. If it comes out clean it is done. Cut into squares
Makes a wonderful base for corn bread stuffing!

Veterans Day

Today's topic is property damage liability:

This is dry material but I need to share it anyway. Many times customers come to me with prior auto insurance coverage that has 10/20/10 liability coverage or state minimum. The first “10” is bodily injury to other people, meaning that if you injure someone with your car it would pay up to $10,000.00 per person for their injuries. The second number “20” means you have $20,000.00 allocated per accident to pay for those injuries, up to $10,000.00 per person. The third number “10” is what I'm talking about today, which is the $10,000.00 to pay for damage to the other person's car, or the street sign you ran over, or the fence you took out. That's not a lot of money so if you have the Florida minimum of $10,000.00 property damage you need to avoid hitting a BMW or really anything more than a very small very old car. Too bad we can't make choices like that, accidents are accidents and if we could avoid them we would. With most companies you can raise this coverage to $25,000.00 for as little as $4 premium cost per term. That's a bargain and it changes those numbers to 10/20/25, a much better choice, for the cost of a premium cup of coffee.

Welcome to the first edition of my S. Florida blog.
Hurricane season is officially from June 1st through November 30th but I think most of the activity in the Atlantic is over for this season. We had scattered tornado damage and quite a few late season flood claims. Now we can pick up the pieces, dry out, and relax until next year.

Be aware that with Citizens roof eligibility inspections three years remaining useful life is useless because it must include the entire upcoming twelve month policy period, therefore four years minimum life is needed to lift non-renewals or to write new property policies.

Even surprised myself when I saved my mother quite a bit of money with Progressive auto insurance compared to what she had through the retirement club. Try it yourself with an online quote here
